The subtle tasting �Tuber Uncinatum" is probably better known as the grey Burgundy truffle. From the end of the 14th century this �grey pearl� was present in the Duke�s of Burgundy dishes. Rediscovered about 20 years ago, truffle harvesting is carried out in forests around Chaumont.
