The subtle tasting “Tuber Uncinatum" is probably better known as the grey Burgundy truffle. From the end of the 14th century this “grey pearl” was present in the Duke’s of Burgundy dishes.
Rediscovered about 20 years ago, truffle harvesting is carried out in forests around Chaumont.
